Join the Wild Grill experience and learn the art of butchery, seasoning, and grilling meat in a four-hour workshop. This hands-on experience takes place on a Cheshire farm in Altrincham and is led by a team of experts including a master butcher and chef. They only use meats sourced within a 10-mile radius of the farm, ensuring the freshest possible ingredients and delivering top-notch tuition. The workshop begins with a welcome beer from a local brewery followed by a pig butchery demonstration where you will learn about various cuts and knife skills. You will then have the opportunity to practice your butchery skills by preparing various cuts of meat on your own. This includes trimming the larger joint into the cuts you desire. You will also learn all about seasoning meat to prepare these fresh cuts for cooking. After a quick break for an aperitif of charcuterie, you will get to try your hand at sausage-making, which can be quite an art! Finally, it's time to fire up the grill and cook all the artisan meats and sausages you made this morning. This part of the course will elevate your grilling abilities to a whole new level. You will have access to an open grill, a BBQ grill, a smoker, a pit, and even a Kamado ceramic egg. You are free to choose whichever grilling method or methods suit you best. And of course, it all ends with a delicious feast!

Introduction (10-15 mins)
- Meet your tutors, enjoy a charcuterie board and your welcome drink
Butchery Session (30-40 mins)
- Learn about a selection of meats including pig, beef, venison, chicken, goat, lamb, pheasant, duck, turkey, and wood pigeon (subject to change depending on seasonality and local availability)
- The master chef with do a full demonstration of the butchery of half a pig
Fire Lighting (10-15 mins)
- Five cooking methods will be covered which are Open Grill, BBQ grill, Big Daddy Smoker, The Pit and Kamada Ceramic Egg
Butchery Session (30-40 mins)
- Demonstration on how to trim down a larger joint in the cut you will use
- Hands on time to prepare a slab of meat yourself
Seasoning (15 mins)
- Learn about seasoning ingredients
- Create the perfect seasoning
Break
- Time to enjoy freshly prepared charcuterie
- Opportunity to purchase drinks from the bar
Sausage Making (30 mins)
- Short demonstration from your tutor
- Make your own signature sausages
Cooking (30-45 mins)
- Head over to the cooking stations where your tutors will guide you through the cooking process
- Enjoy cooking the meats you have prepared
The Feast (30-45 mins)
- Join your tutors and course mates for a feast in the Nordic Tipi to enjoy the food you have prepared and cooked
- Enjoy side dishes and additional cuts that have been slow cooked by the chef
